5 Must-Try Food Trucks in Rexburg, Idaho

Summer in eastern Idaho means something different to everyone. Some people enjoy the summer for its weather or lack of school...and others like summer because it’s food truck season. Though the trucks come out around May and last until about October, it always feels like summer when they are here.

Although Rexburg is a small town, there is no shortage of food trucks. If you are looking for something sweet or something to satisfy your craving for fair-food, Rexburg has the truck for you.

Creamy custard and Italian ice are a match made in heaven… at least, we think so. If you haven’t been to Karie Anne’s yet, you are seriously missing out. Their Italian ice is shaved so thin that all their fun flavors—like blue & red raspberry, green apple, tiger's blood, pina colada, strawberry, mango, and peach—are evenly distributed. You won’t experience any large chunks of ice that just taste like water.

Italian ice and custard may seem like a strange combination at first, but the sharp flavors of the ice pair astoundingly well with the sweetness of the custard. They always have a chocolate and vanilla custard, but each week they’ll feature a new flavor of custard and Italian ice. Some of their seasonal custard flavors include huckleberry, coconut, salted caramel, raspberry cheesecake, and strawberry. You’ll have to keep coming back to try every flavor combination imaginable. Or, you can get the same thing each time, like pina colada and peach Italian ice with vanilla custard…but that’s just me.

Each night, no matter the weather, you will find a line outside of Karie-Anne’s bright yellow trailer. It’s no secret to the locals that the desserts here are incredible. World’s Best Corndogs

The smell of fried food instantly makes me think of Ferris wheels, rodeos, and all my memories of small-town fairs. If you are looking for a corndog to rival any fair food, World’s Best Corndogs are, well, the best! Located next to JB’s on Rexburg’s Main Street is the bright yellow and blue trailer exclaiming, “World’s Best Corndogs!” The smell of the deliciously fried batter will have your mouth watering as you read their menu.

While mustard and ketchup are standard condiments for corndogs, World’s Best Corndogs also uses honey to bring out the flavors in their batter. Honey, along with the ketchup and mustard, on your corndogs will leave you craving more. If you are looking for something a little different to try rather than a corndog, get their fried cheese sticks. Rumor has it that their fried cheese tastes just like a grilled cheese sandwich.

You can eat your food at the World’s Best Corndog stand, or you can eat it on the go. If you want to eat and walk, why not head down to Porter Park just down the street to enjoy some more time outside? Just be sure that wherever you eat your corndog or cheese stick, you pick up some napkins to bring along.

Big Papa’s Fries

You can pick up cold, stale fries from just about any fast food place. Stop settling for fries that taste like cardboard when you could be enjoying Big Papas Fries. This food truck is on the move often, so you’ll want to follow them on Facebook to know where to find them next. The reward for your treasure hunt? Deliciously seasoned or loaded fries.

Big Papa’s Fries does make an appearance every Friday at the Rexburg Farmer’s Market on College Avenue, so you’ll be able to find them there. This year, the opening day of the farmer’s market is May 29. You can choose what types of seasonings you want on your fries to mix up the flavors, or you can load them with chili, bacon, and cheese or pulled pork, depending on what they have available.

When it comes to potatoes, Big Papa’s Fries knows what they are doing. If you are craving something salty, it’s time to try Big Papa’s Fries!

T-Rex Burgers

Burgers aren’t necessarily hard to come by, but fresh burgers with your choice of toppings and condiments are. T-Rex Burgers, next to the Wendy’s on 2nd East, serves world-class burgers, just the way you like them. Customers get to choose their patty, cheese, fresh toppings, and condiments to make it a burger any style you like.

T-Rex Burgers are truly unique. Not only do they serve an original patty, but they also serve bacon, taco, and spicy seasoned patties. You can choose between real cheddar, swiss, provolone, pepper jack, Colby jack, mozzarella, or American cheese slices. The hard part is choosing what toppings to include, like bacon, lettuce, tomato, pickles, onion, jalapenos, grilled onion, or an egg. There are also a number of condiments you can add to your burger, like T-Rex sauce, ketchup, mustard, rancho, mayo, salsa, sour cream, and more! If you want to skip the bun, you can ask for your burger to be in a lettuce wrap. You can make your burger a meal by adding fries and a drink.

The moment you smell the enticing aroma wafting from T-Rex Burgers, your mouth will be watering for a true burger. It’s almost a crime to want to settle for anything else.

Crispy Cones

Next to T-Rex Burgers is Crispy Cones. If you can ignore the scent of cinnamon and dough, you are stronger than most. They sell a famously sweet, Czech Republic treat known as the Crispy Cone, which is delicious cinnamon-sugar dough in the shape of a cone. There is no doubt that this is one of the sweetest treats in Rexburg. You can fill your crispy cone with fruit or ice cream and drizzle it with sauces like Nutella, caramel, white chocolate, or cookie butter. Sure, you might go into a sugar coma afterward, but it will be worth it.

You can choose between a large or a medium cone, but the choices from there get tougher to make. For a fruit filling, you’ll need to choose between strawberries or bananas and for ice cream, you’ll have to choose between chocolate, vanilla, swirl, or whatever special they are serving. If you choose ice cream, you’ll want some toppings to go with it--like Oreos, bananas, nuts, strawberries, heath bar, and more!

This is one decadently sweet treat you need to indulge at least once! (Though with all the topping choices, you’ll be back for more).
